BERRY BUTTER CAKE (GF) - A berry butter cake is a classic dessert that celebrates the simple pleasures of home baking. Gift Pail (14 oz.) INGREDIENTS:Rice, Tapioca and Arrowroot Flours, Cane Sugar, Baking Powder, Orange Vanilla Sugar (special pure orange extract [alcohol, water, and orange oil], and Vanilla Extract [vanilla, water, propylene glycol, and caramel color]).

Instructions

1 large egg,
1/2 cup unsalted butter, melted
Place the oven rack in the upper third of the oven and preheat to 350 degrees F. Grease the bottom and sides of a 9-inch pie plate. In a medium bowl, use a hand beater to combine the melted butter with this mix. Add egg and beat to combine into a crumbly dough. Press the dough into the prepared pie plate.

Gooey Berry Batter
3/4 cup of fresh berries
2 Tbsp water
In a saucepan, stir together the fruit & water
over low heat until berries start to burst. Simmer
to thicken, 5-8 min. Remove from heat, transfer to
a small bowl, and allow to cool.
Berry Batter Mix, 1 egg, beaten,
6 oz softened cream cheese, beaten
Add the Batter Mix and cream cheese and incorporate. Fold in egg. Refrigerate.

Spread the berry batter on top over the dough. Spoon the berry mixture on top in dollops. Swirl the topping into the batter. Bake 35-40 min until the edges are golden and the middle is set with a little jiggle.
Allow to cool for 30 min at room temperature. Refrigerate for at least two hours
before serving.
